Lemon Basil Pound Cake

If you made the homemade basil simple syrup, you likely need another recipe, or at least I needed another recipe because I still have quite a bit left.

Google to the rescue!

I found this positively delicious pound cake with lemon-basil glaze. It sounded absolutely amazing, and it’s definitely going on my to-bake list.

Have you ever made a pound cake and people turned their noses up at it? I have, and it actually hurt my feelings. It took everything I had to make people try a bite because I knew if they just tried it, they’d like it. And they did. And they liked it.

One woman approached me and said, “I’ve never liked pound cake until I had yours. Where’d you get the recipe?” I told her that got it from Better Homes & Gardens and that homemade pound cake is the only way to go, and I really try to do homemade foods for gatherings and events and meetings and whatever. It really makes a difference even if people are initially cruel. My thought is that if I unintentionally leave a bad first impression, maybe my food will rescue me? Dunno.

Anyway, like I said, today’s cocktail is inspired by a very special pound cake, and it’s tangy and sweet with a wonderful aftertaste. I could probably chug a gallon of these and then have a hard time standing up!

Recipe:

In a Collins glass filled with crushed ice, pour ½ oz basil simple syrup, ½ oz white rum, and 1 oz wedding cake vodka.

Squeeze the juice of half a lemon on top.

Garnish with fresh basil (edible flower optional) and serve with a straw.
