Chicken & Coleslaw Tacos

I have no idea – I don’t watch football, but I do eat party food which is the best kind of food to eat when drinking. And I will attend any party so long as there’s booze and food. I’d probably attend a rabbit breeders convention if there was an open bar, and I don’t have a rabbit!

Anyway, today my husband made a BBQ chicken, and omg, it looked so good. Now it looks borderline revolting after being stripped down to the bones and cartilage, and it’ll likely look worse after being turned into stock for some delicious chicken noodle soup. However, with the meat, we made BBQ chicken and coleslaw tacos that were crunchy and full of flavor. So good!

Chicken Recipe:

  • 1 roasting chicken, 4-5 pounds, gutted
  • 2 small onions, halved
  • 4 cloves of garlic
  • 2 tbsp whole black peppercorns
  • ~2 tbsp bacon drippings
  • 1+ tbsp salt
  • 1+ cup barbecue sauce

Preheat your oven to 425F. Wash the chicken and pat dry. Alternately stuff with onion, garlic, and black peppercorns until it is full. Close up the chicken as you prefer; we leave the legs free and tuck the wings in using small incisions in the breast. Cover in salt and the bacon grease. Roast in a rack, checking after 60 minutes until the breast meat has reached 160F. Remove from the oven and drain the drippings from the pan. They will not be helpful under the broiler.

Turn on your broiler. You want to have the broiling element above the chicken, whether the upper electrical broiler in your oven or a gas broiler. Sloppily mop/spoon/wipe the barbecue sauce all over the part of the chicken you can easily reach. Put the chicken under the broiler element, checking regularly after 3 minutes. It should have the pretty glaze within 5 minutes. Remove and allow to rest.

Coleslaw Recipe:

Toss shredded cabbage with fresh lime juice, vegetable oil, salt, and pepper to taste.

Refrigerate for an hour to set the flavors.

Recommended Serving for Parties:

Strip chicken meat and cut into manageable slices. Place slices in a slow cooker (set to warm) covered in BBQ sauce. Self-serve with a fork.

Set the coleslaw in a bowl and toss to remix the flavors. Self-serve with tongs.

Warm taco shells and insulate.

  1. Wow a nondrink recipe! When I first read the title, I was like wow interesting, I wonder how she managed to blend chicken and coleslaw tacos into a drink lol.

    I used to be the same way, showing up somewhere just for the food and booze. I remember going to weddings of friends of friends I don’t even know just to eat and drink lol.
