Chai Simple Syrup

I recently learned that one of my sisters has been reading this blog and liking the recipes but doesn’t want to buy all the liqueurs, and fair enough! I use a lot of liqueurs because I enjoy them, but there are some easy ways to make your own cocktails with flavored or infused simple syrups, so if you liked the soy chai latte cocktail but don’t have all the liqueurs that I used, you can make this alternative version with a super easy simple syrup, vodka, and soy milk. I’d recommend keeping the syrup separate for the occasional non-alcoholic chai latte, but it’s up to you!

Recipe for Chai Simple Syrup (roughly 12 oz):

Microwave 1¼ cups of water in a mason jar (pint) until boiling temperature and steep 4 chai tea bags for 2-3 minutes. I used Celestial Seasonings’ Vanilla Chai.

Add ½ cup of sugar (or sugar alternative). You might want yours sweeter, but start with ½ cup and add more later.

Cover the mason jar and shake until the sugar is dissolved. If the sugar doesn’t dissolve completely, remove the lid and throw it in the microwave to reheat.

Refrigerate.

Recipe for Soy Chai Latte Cocktail:

In a Collins glass filled with ice, pour 1 oz chai simple syrup and 1 oz vodka.

Top with soy milk.

Serve with a straw.

    • I imagine you’ll drink it long before it goes bad. 😛

      But I imagine it should keep for a while – I’m going to guess 2-4 weeks.
