Pear & Gorgonzola Appetizer

Here’s a quick and easy appetizer inspired by one of the best salads I ever had because, in case you hadn’t noticed, everything on this blog is inspired by one thing or another.

Also, I like cheese and crackers A LOT, so when I call this an appetizer, it’s more like dinner.

For me.

And nobody else.

Because I’m a biter.

And went through several day care centers as a child.

And by “child”, I mean last year.

Recipe:

Mix 1 part finely crumbled gorgonzola with 2 parts cream cheese (room temperature).

Spread the cheese mixture on each cracker.

Place a slice of pear on top and drizzle with a high quality balsamic vinegar. I’m using a fig balsamic from Con Olio which I may or may not use in a future cocktail.

Then add a bit of lettuce (e.g., red leaf or arugula).

Serve immediately.

If you cannot serve immediately, keep the vinegar separate to be drizzled prior to eating.
