Blueberry Lemon Cookie

In Nacogdoches, TX, they throw an annual blueberry festival, and ever since hearing about it, I’ve wanted to go because I’ve found that festivals with a specific food theme are very interesting. Granted, I think I’ve only ever been to two, but they were great!

In upstate New York, there’s a grape festival, and my husband and I went on a whim – that’s when we discovered the most amazing pie ever: a grape pie. It tasted like grape jam with all the texture of lightly cooked grapes which absolutely blew us away. Later we discovered that we ate THE grape pie to end all grape pies. Total happy accident.

We’ve also attended the Spam Festival in Austin, TX which was both terrifying and magnificent particularly because they have a selection of good food and a selection of horrifying food with a prize for the best and the worst. The year we went, the winner of the worst was a spam soda, and by golly, those winners were proud!

Today’s high is supposed to be right now, and it’s just going to get colder and colder which means that it’s time to pretend that it’s warm and not really that bad outside. Inspired by this summery blueberry lemon cookie, I made this drink which is subtle, tasty, and pretty to look at it.

Recipe:

In a 12 oz glass, muddle a dozen or so blueberries with ½ tsp of sugar. I imagine this would work well (and possibly better) with a tablespoon of blueberry jam.

Fill glass with crushed ice and pour 1 oz limoncello, ½ oz wedding cake vodka, ½ oz butterscotch schnapps, and ½ oz white rum.

Top with sparkling water.

Garnish with a few blueberries and a lemon twist.

Serve with a straw.

  1. Spam festival? Wow that sounds interesting. I didn’t think most Americans liked spam much. Spam soda sounds crazy lol.

    I’ve always wanted to go to the Strawberry Festival they have in socali every year. I love strawberries. Last year, I went to a Lemon Festival, but it wasn’t that fun, not what I expected. I was expecting a bunch of lemony things to try, but it was just kind of a disappointment.

    I hope to check out some more festivals this year.

    • I tried a lot of things at the spam festival but avoided the spam soda. 😛

      I’ve not been to a strawberry festival, but I have been to a pick-your-own strawberry farm which was crazy fun! Too bad about the lemon festival. I went to a local German festival, and it was crazy disappointing – way too much sausage and funnel cakes and other nonsense.
