Why, oh, why do my husband always have to go overboard when it comes to making food?

Answer: We’re dumb.

Backing up a bit, my husband and I celebrated our first Thanksgiving in our first house with enough food to feed 12. Most impressively we managed to make a full gallon of gravy which we’ve not managed since despite cooking similarly sized birds. It was awful, especially since we had not made appropriate arrangements for storing all the food, and all of our local friends were out of town.

Fast forward to today, and we’re still doing dumb stuff. For example, we recently made a 5lb carrot cake with a double recipe of cake and a triple recipe of frosting. Shockingly, we’ve only been left with a (rather hefty) single slice which has seen better days. Don’t get me wrong – it was really, really tasty, but 5 lbs of anything will burn out the most avid of consumers.

Obviously, the exception to that rule is bacon.

So to bid a fond ado and hopefully learn something this time, I concocted a carrot cake cocktail.

We salute you, 5 lb carrot cake, and wish you all the best of luck inside a raccoon’s stomach as soon as it sees you in our compost pile. You have been a true friend for the past week and a half.

Recipe:

In a 16 oz (pint) glass filled with ice, pour ½ oz Jägermeister, ½ oz Goldschläger, ½ oz Limoncello, 1 oz Pecan Liqueur, and 1 oz Wedding Cake Vodka.

Top with carrot juice and serve with a lemon twist and a straw.
