Yesterday I made far too much food yet again, and my only excuse is go large or go… learn-a-way-to-better-manage-your-time-and-ingredients-when-experimenting-with-a-new-recipe.

I literally made over 100 of these peanut butter coconut rum balls because I had to keep adding more and more ingredients in order to adjust the mixture. Currently I have no plan for what to do with them all.

Thankfully they’re delicious as proven by my husband who came home and ate one immediately as they were setting in the fridge.

After chewing a bit, he worriedly asked, “Wait, how drunk are these going to get me?”

LOL! That’s just proof that most of my boozy things almost always taste like there’s no booze at all.

This time there really isn’t much booze in each ball, so I assured him that he wasn’t going to get drunk as he quickly continued onto a second one.

So I left them in the fridge to set overnight, and when I woke up this morning, there was a noticeable amount missing from the tray. Apparently, someone, not me or the pets1, got hungry and kept snacking.

My husband claims that it must have been a mouse after reading a report that the CIA is breeding super intelligent, industrious army mice that have gotten loose, and if that’s the case, I’m not too sure these tasty confections will last long enough for me to give a few dozen away.

Recipe for 100+ balls

Ingredients:

  • 325.5g of Graham Crackers (21 graham cracker sheets)
  • 1 cup Coconut Rum
  • 4 cups Powdered Sugar
  • 1 cup Sweetened Coconut Flakes
  • 1 jar of Peanut Butter (15oz)
  • ½ cup Unsalted Butter (softened)
  • Unsweetened Cocoa Powder

Instructions:

  1. In a food processor, combine coconut rum and graham crackers until well chopped and dissolved.
  2. In a bowl, combine the coconut rum and graham cracker mixture with the powdered sugar, coconut flakes, peanut butter, and unsalted butter until the dough is uniform.
  3. Using a ½ oz small ice cream disher, make 1” balls and roll in cocoa powder.
  4. Allow the balls to set in the refrigerator for 30-60 minutes.
  5. Once set, dust with more cocoa powder.
