Mint Watermelon

Again I’m deviating from the plan I’d set for today even though I managed to find the shot glasses, and the reason is a personal watermelon my husband bought a few weeks ago and still hadn’t eaten. To finally use it before it went bad, I ran the meat through the blender and the pulp through a strainer, and holy cow, half of a personal watermelon produces a lot of juice!

Watermelon isn’t in season, but living so close to Mexico, it’s quite easy to get all throughout the year. When it is in season, you can buy huge ones for $10 or so, and during the ridiculously hot months, it’s quite easy to live off them for water and electrolytes which I highly recommend. I prefer the ones with big black seeds that are easy to spit out because the “seedless” ones are just plain irritating.

Anyway, with the juice I’d made from the nearly forgotten melon, I decided to make a refreshing beverage for my husband who’s currently working on a new bed for our plumeria trees. It’s tasty and sweet and certainly appreciated.

In a 12 oz glass mostly filled with crushed ice, pour 1 oz white rum and ½ oz white creme de menthe.

Top with fresh watermelon juice.

Garnish with fresh mint and serve with a straw.
