Yep, I still have coconut milk, but that’s because making one drink a day with a couple ounces of the stuff doesn’t use it up all that quickly. Ah well… I guess this gives at least one more idea for using coconut milk in cocktails, and this one’s good. It was inspired by Better Homes and Gardens’ Peach Macaroon Cobbler. How delicious does that sound!?

In a Collins glass filled with crashed ice, pour 1 oz peach schnapps and 1 oz wedding cake vodka.
Top with coconut milk.
Serve with a straw.
